Boozy Mojito Pops

Ingredients

  • 2 1/2 cups lemon lime soda (I used Sprite)
  • 1/4 cup Bacardi rum
  • 1/3 cup freshly squeezed lime juice (from 2-3 limes)
  • 1/3 cup simple syrup
  • 10-12 fresh mint leaves
  • 3 cups ice
  • 2 limes – thinly sliced
  • 6 fresh mint leaves
  • Popsicle Mold
Ingredients for Mojito Pops

How to Make Mojito Pops

First, add 1-2 lime slices and a mint leaf to each ice pop mold and set aside. Next, add the soda, rum, lime juice, simple syrup, 10-12 mint leaves and ice to a blender.

Blend until you achieve a slushy consistency and pour into each mold, up to the fill line. Insert lids/sticks and freeze overnight or for at least 8 hours. Before serving, rum warm water over the ice pop molds for 10 seconds and gently lift out.

How to Make Mojito Pops
