I know, it’s not Thirsty Thursday but these Boozy Mojito Pops were too good to hold onto until next week! A great mojito can be refreshing, and these cocktail pops are exactly that. Serve them up for your summer parties, or pop them in the freezer to enjoy when you need a little me time.

Boozy Mojito Pops
Mojito Pops Ingredients
- 2 1/2 cups lemon lime soda (I used Sprite)
- 1/4 cup Bacardi rum
- 1/3 cup freshly squeezed lime juice (from 2-3 limes)
- 1/3 cup simple syrup
- 10-12 fresh mint leaves
- 3 cups ice
- 2 limes – thinly sliced
- 6 fresh mint leaves
- Popsicle Mold
How to Make Mojito Pops
First, add 1-2 lime slices and a mint leaf to each ice pop mold and set aside. Next, add the soda, rum, lime juice, simple syrup, 10-12 mint leaves and ice to a blender.
Blend until you achieve a slushy consistency and pour into each mold, up to the fill line. Insert lids/sticks and freeze overnight or for at least 8 hours. Before serving, rum warm water over the ice pop molds for 10 seconds and gently lift out.
