Two more weeks until Summer vacation for us. One of the things I dread about that is the increase in grocery budget Summer brings. With all four kids eating every meal at home, and snacks, there is a wee bit more in my cart when school is out. The good thing is, I’m able to keep that increase in food to a wee bit by getting creative and substituting. Something I do all the time, but even more so during Summer, and that’s just what I did with these Strawberry Cinnamon No Bake Bites!
Strawberry Cinnamon No Bake Bites
- 1 Cup Gerber® Lil Bits Oatmeal Banana Strawberry
- 1/2 Cup Peanut Butter
- 1/2 Cup Cinnamon Chips
- 1/3 Cup Syrup or Raw Honey
- 1/4 Cup Flaxseed
You are probably looking at these ingredients and thinking what? Baby cereal? Yep! 😀 Baby cereal isn’t just baby food, it also makes a great recipe substitute. Gerber® Lil Bits are Iron-fortified and have fruit, making them great for adding flavor too. It’s not just flavor that makes it a great substitute in recipes. It’s also the Vitablocks® blend of six B Vitamins, Vitamins E and C, iron, zinc, and calcium.
Okay, it’s time to make these no bake bites! First you want to put Flaxseed, cinnamon chips, and Gerber® Lil Bits into a bowl.
Next, add in syrup and peanut butter and mix it all together.
I started mixing with a spoon, and then I’m going to be honest, I stuck my hands in the bowl and mushed it all together to form a giant ball shape because it worked SO much better. If you mix it a little first, it’s not sticky when you use your hands.
Now mold into spoonful sized balls and place on a foil lined baking sheet. You will end up with 20 balls and this job goes much quicker if you have a cookie scooper that toddler twins haven’t hidden somewhere in the house….
The final stop before your belly is the freezer. The Strawberry Cinnamon No Bake Bites took about 20 minutes to set in my freezer.
The result is a delicious no bake bite that works great for breakfast and on-the-go snacking. With a busy tween and teen, as well as toddler twins, I love having grab and go eats in the house, that are a healthier option. These Strawberry Cinnamon No Bake Bites are easy to whip together and
