A strawberry cantaloupe bruschetta that is perfect for Summer!

Strawberry Cantaloupe Bruschetta with Balsamic Glaze
Strawberry Cantaloupe Bruschetta Ingredients
(This recipe will yield 12-15 pieces, depending on how large your baguette is.)
- 1/2 cantaloupe- diced
- 1 cup strawberries- diced
- 8 oz. mozzarella- diced
- 1/4 cup fresh basil – torn into small pieces
- 1/4 cup olive oil
- 1 large French baguette
- 1/3 cup brown sugar
- 1 cup balsamic vinegar
To start, slice the baguette diagonally, into 1-inch pieces, and place on a shallow baking pan. Next, brush with olive oil and broil on high for 3-4 minutes, or until golden brown and toasted. Once out of the oven, set it aside to cool.
Grab a large bowl and fill it with your diced fruit and basil. Gently toss the mixture together, cover and chill while preparing the balsamic glaze.
For the balsamic glaze, you will need a small saucepan. Add to the saucepan, the sugar, and balsamic vinegar. Stir to combine and heat over medium heat, stirring occasionally until the mixture thickens and reduces by half.
This process usually takes about 15 minutes. Once it’s reduced, remove from heat and let it cool.
Right before serving bruschetta, spoon the fruit and cheese mixture on top of each baguette. Doesn’t it look so pretty?!
