The first date my husband took me on 21 years ago was to a local Chinese restaurant. It was my first time there and we spent many date nights there over the course of 5 years – before it went downhill. Our love grew stronger over bowls of fried rice and plates of General Tso’s chicken. Fried rice didn’t just find it’s way into our dating memories though. It’s also one of the very few dishes my ENTIRE family loves.
Lime Corn Salad with Thai-Style Chicken Fried Rice
When all four kids and husband like something, you can bet it’s on the menu rotation often. Especially if it’s a meal that doesn’t take a lot of effort or time. Busy schedules mean quick meals, like Lime Corn Salad and Thai-Style Chicken Fried Rice! It may sound like I slaved over that fried rice but it took less than 8 minutes on the stove-top thanks to Ling Ling!

The other night we had Ling Ling Thai-Style Chicken Fried Rice for dinner. I forgot to pick up any side dishes so I whipped together Lime Corn Salad and it made the perfect side dish!
Lime Corn Salad is super simple to make and I think it’s tasty both warm and cold. All you have to do is toss a can corn in a bowl with melted butter, fresh lime juice, chili powder, and cilantro. Mix it all up and serve with a bowl of Ling Ling Thai-Style Chicken Frozen Fried Rice for a quick and yummy dinner.
I can smell it all over again as I type this. The lime juice and cilantro are a wonderful combination. Pair that with a little kick of chili powder and you’ll be coming back for more. Next time I make it, I’m going to serve it with Ling Ling Chicken Dumplings in Chili Sauce. Asian Dumplings and chili sauce sounds amazing, doesn’t it?! If they’re anything like the fried rice, they’ll give my restaurant favorites a run for their money.

Lime Corn Salad Recipe
2 Cans of Corn
1 Teaspoon Chili Powder
1 Tablespoon Fresh Lime Juice
1/2 Tablespoon Fresh Cilantro
2 Tablespoons Melted Butter
- Heat Cans of Corn
- Melt Butter
- Stir Butter, Lime Juice, and Chili Powder together and mix with the corn.
- Add fresh cilantro before serving.
