Cast Iron Skillet Recipes on Pinterest are growing and I love seeing everything from dinners, to desserts (hello Indoor S’mores Bar), breakfasts and even tortillas! Today I’m adding one to the list with this Citrus Lime Chicken Cast Iron Skillet Recipe!

Citrus Lime Chicken
Cast Iron Skillet Recipe
Ingredients
- 3-4 large chicken breasts
- 3 tbsp.Olive Oil
- Salt and pepper
- 2 tbsp. Citrus seasoning
- 2 Yellow squash – sliced
- 2 Zucchini – sliced
- 3 limes
- Parsley for garnish
Directions
1 – Place chicken breasts in a large tightly sealed container. Add 1/2 of a freshly squeezed lime juice and citrus seasonings, then let refrigerate for 2 hours.
2 – In cast iron skillet add 3 tbsp. of olive oil and place on your stove-top at medium heat to high heat.
3 – Once the oil is bubbling, add your chicken breasts and cook on high for 5 minutes, until the breasts look crispy, then rotate and cook for another 5 minutes.

4 – Reduce heat to medium and cook on both sides for 12 minutes each to ensure they are completely cooked, then pull the chicken out and place to the side.
5 – Add sliced yellow squash and zucchini slices to the cast iron skillet, and add 1 tbsp.of citrus seasoning and salt and pepper to taste
6 – Cook on medium heat till tender.
7 – Turn off heat and place the chicken back in the skillet.
8 – Garnish with Parsley and lime wedges.
9 – Eat & Enjoy!
