Fall officially begins tomorrow. I am SO excited and my belly is too! 😀 I was craving the smells and flavors of fall over the weekend, so I cooked up a stew and threw together a yummy salad. If you follow Mom on the Side on Instagram, you saw my hints about something delicious coming to the blog today, and it’s here! This Cranberry Turkey Salad with Homemade Cranberry Vinaigrette is perfect for fall, leftover Thanksgiving turkey, and pretty much anytime.
Cranberry Turkey Salad Ingredients
- 1 Bag of Spinach
- 1/2 Cup Ocean Spray® Craisins® Dried Cranberries
- 1 Cup Turkey Breast – cold and cut up
- 3/4 Cup Candied Pecans – purchased or make homemade
- 1/2 Cup Gorgonzola Cheese – crumbled
Homemade Cranberry Vinaigrette Ingredients
- 1/2 Cup Cranberries
- 1/2 Cup Cider Vinegar
- 1/4 Cup Olive Oil
- 2 Teaspoons Sugar
- Pinch of Salt and Pepper
Start by making the Homemade Cranberry Vinaigrette. Add the cider vinegar and Ocean Spray® Craisins® Dried Cranberries to a pan, and cook over medium heat until the cranberries are soft and breaking down. I opted for dried cranberries because honestly, that is the only way I will eat them. The taste, texture and color, and they just have that “zing” that make them unique and yummy. Plus, did you know that 1/4 cup of Ocean Spray® Craisins® Dried Cranberries provides 1/2 cup of fruit?!
Once the mixture is boiling and the dried cranberries have softened up, remove from heat and add oil, sugar, salt, and pepper. Stir together, then pour in the blender and mix until smooth.
Finally, pour the Homemade Cranberry Vinaigrette into a container (I used a small mason jar that it filled nicely) and place it in the fridge to chill.
While the vinaigrette chills is the perfect time to put together the Cranberry Turkey Salad. Start by filling a large bowl with a bag of spinach and gathering up your toppings.
Layer on the salad toppings starting with turkey, then dried cranberries, followed by cheese and candied pecans.
If you want to make candied pecans, you can do that easily in the oven. Simply toss a pound of pecans in an egg white wash, then toss them with a mixture of cinnamon and sugar. (I used 1 cup of sugar and 1 teaspoon of cinnamon for 4 cups of pecans) Place them on baking sheet covered in parchment paper, and cook at 250 for an hour – stirring around every 15 minutes so they don’t burn.
When the salad is completed and the Cranberry Vinaigrette is done chilling, it’s time to marry their deliciousness together and dig in! I love the combination of all of these ingredients and it’s a salad that says fall. Especially with those tasty dried cranberries.
I recently noticed that Ocean Spray® Craisins® Dried Cranberries disappeared from the local Sam’s Club, but good thing they can still be found at other retailers. If I hadn’t found bags at Target over the weekend, I don’t know what I would have done for my fall salad fix.
